El Abra is helping bring the flavors of the Chilean Andes to your table.
Through its Heritage Fund, El Abra has partnered with the Ollagüe Indigenous Tourism Association to create the recipe book “Cocinando en las Alturas,” (Cooking in the Highlands). The initiative seeks to preserve the ancestral recipes of the Quechua culture.
The book features 15 traditional recipes, covering appetizers, main courses, desserts and beverages. Native ingredients from the Andean highlands – such as llama meat, Rica Rica herb, chuño potatoes, and quinoa – are among the staples that represent the region’s rich culinary heritage.
The cookbook is part of an initiative supported by El Abra’s Heritage Fund, dedicated to safeguarding the cultural heritage of the Antofagasta region. It focuses on preserving culinary traditions while also promoting sustainable tourism in the area.
As part of the project, 15 members of the association recently participated in a culinary class hosted by El Abra. During the 40-hour class, which was led by a chef from the INACAP Professional Institute in Calama, participants prepared all the dishes included in the cookbook.
El Abra’s Heritage Fund financed the printing of 200 copies of the book to help ensure its distribution within the community. An online version of the recipe book also is available on El Abra’s website.
